Mushroom, Chicken soup recipe


 Ingredients:

  • 1 lb boneless, skinless chicken breasts, diced
  • 8 oz mushrooms, sliced
  • 1 onion, finely chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup orzo or small pasta (optional)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Sauté Vegetables: In a large pot, heat olive oil over medium heat. Add chopped onions, carrots, celery, and garlic. Sauté until the vegetables are softened, about 5 minutes.


  2. Cook Chicken: Add diced chicken to the pot. Cook until the chicken is browned on all sides.


  3. Add Mushrooms: Add sliced mushrooms to the pot and sauté for an additional 3-4 minutes until they are tender.


  4. Season: Season with dried thyme, rosemary, salt, and pepper. Stir well to combine.


  5. Pour Broth: Pour in the chicken broth. Bring the soup to a boil, then reduce the heat to low and let it simmer for about 15-20 minutes to allow the flavors to meld.


  6. Optional: Add Pasta: If you want to add pasta, stir in the orzo or small pasta of your choice and cook according to package instructions.


  7. Check Seasoning: Taste and adjust the seasoning as needed. Add more salt and pepper if necessary.


  8. Serve: Ladle the soup into bowls. Garnish with chopped fresh parsley.
