Masala Khichdi Recipe
Ingredients: 1 cup basmati rice 1/2 cup split yellow moong dal (lentils) 1 large onion finely chopped. 1 large tomato, chopped. 1/2 cup mixed vegetables (carrots, peas, beans), chopped. 1 teaspoon ginger-garlic paste. 1 teaspoon cumin seeds 1/2 teaspoon mustard seeds 1/2 teaspoon turmeric powder 1/2 teaspoon red chili powder (adjust to taste) 1/2 teaspoon garam masala A pinch of asafoetida ( Hing ) 2-3 tablespoons ghee or oil Salt to taste 4 cups water Fresh coriander leaves for garnish Instructions: Wash the rice and lentils together under running water until the water runs clear. Soak them in water for about 15-20 minutes. In a pressure cooker or a heavy-bottomed pot, heat ghee or oil over medium heat. Add cumin seeds and mustard seeds. Let them splutter. Add chopped onions and sauté until they become translucent. Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
